Almond Cookie ‘Larabars’
I am quickly becoming one of those foodies who checks the ingredients on her packages of food. If I can’t pronounce it, I generally don’t want to eat it.. While browsing the Tone It Up site this morning for my pancakes, I also fell on these yummy looking bars.. Larabars are a popular whole food bar over in the States. Sadly, we don’t get them here (but we should!). Some facts about Larabars:They are unprocessed.They are raw.Gluten FreeVeganDairy FreeSoy FreeIn fact, all this recipe uses is:  • 1/2 cup dates • 1 cup almonds • 1/4 tsp salt • 1/2 tsp vanilla • plastic saran wrap <— obviously to wrap them in…* I also added a pinch of dark chocolate chips, and pulsed them in the blender too ;) Other extra options can also be shredded coconut or cinnamon.. next time!My bars didn’t come out as pretty looking or thick as the ones in the original recipe from Eye It Try It. But practice makes perfect, and they were so yummy that I will definitely be making more.These will make a perfect snack to have along with some fruit or a pot of yoghurt.
